Swine & Sea — Braised Fennel — French Creole Recipe

Braised Fennel

Braised fennel is an unknown treat. Add it to dishes to add a bit of black licorice taste or even add it on a charcuterie board.

Recipe

  • 2

    fennel bulbs
  • 3 cups

    vegetable stock
  • 2 Tbsp.

    unsalted butter
  • 1 tsp.

    Kosher salt
  • 1 tsp.

    black pepper , freshly ground
    Step 1
  • Remove the stems of the fennel and shave the bottom of each bulb to remove the dirt. Quarter each bulb leaving the end to keep each quarter entacted.

  • Step 2
  • In a medium pot combine all of the ingredients including the prepared fennel. Bring to a simmer over low heat. Allow the fennel to simmer until it becomes fork tender, approximately 30 minutes.

  • Step 3
  • Remove the pot from the heat and allow to cool. Store in refrigerated in an air-tight container.
