French Fromage Fort with Chives

The origin of the French Fort is unknown though the basic concept is to use leftover bits of cheese, combine it with a bit of butter, wine and herbs to create a spread where the whole is greater than the sum of its parts.  In saying that, one should use great cheese and great butter to which there is a higher fat content.  Softer cheese works better.  Serve with crackers, sliced bread or even those spring radishes.

Recipe

French Fromage Fort with Chives
  • 8 oz.

    mixed soft cheese bits , removing any rinds you don't want to eat before you weigh
  • 4 Tbsp.

    unsalted butter , at room temperature
  • 1

    garlic clove , finely grated
  • ¼ cup

    dry white wine
  • 3 Tbsp.

    fresh chives
  • freshly ground black pepper
  • flaky sea salt
    Step 1
  • In a blender or food processor, add the cheeses, butter, garlic, white wine, chives and ½ tsp. of freshly ground black pepper and ⅛ tsp. of the flaky sea salt. Blend until smooth.

  • Step 2
  • Season with black pepper and flaky sea salt to taste.

  • Step 3
  • Transfer the mixture to an air tight container. Cover and allow to rest at room temperature for at least 2 hours.

  • Step 4
  • Server with crackers, pieces of a torn baguette or fresh radishes. Store in the refrigerator for 1 week.
