Swine & Sea — Ham Salad — French Creole Recipe

Ham Salad

Ham salad is great snack that can use up all of your leftover ham from Easter, Thanksgiving or any holiday. You want your ham salad to be on the drier side, so I tend to add the mayonnaise a tablespoon at a time to help control this. Serve on your favorite cracker as a snack or on two slices of toasted bread with some crisp lettuce.

Recipe

  • 2 cups

    ham , skinned removed
  • 2

    celery stalks , finely chopped
  • ¼ cup

    yellow onion , finely diced
  • 2

    hard boiled eggs , diced
  • ¼ cup

    hot dog relish
  • ½ cup

    Duke's mayonnaise
  • freshly ground black pepper
    Step 1
  • Run the ham through a meat grinder, using a medium size die. If you don't have a meat grinder use a food processor to get a fine dice on the ham.

  • Step 2
  • In a medium bowl, combine the ground ham, celery, yellow onion, hard boiled eggs and hot dog relish.

  • Step 3
  • Starting with a ¼ cup add the mayonnaise and combine.

  • Step 4
  • Continue to add the remaining mayonnaise until you get the consistency you are wanting, more dry than wet.

  • Step 5
  • Season with a good amount of fresh ground pepper.

  • Step 6
  • Refrigerate in an air-tight container for at least a couple of hours to allow the flavors to meld. Serve on saltine crackers or toasted bread.
