Swine & Sea — Pimento Cheese — French Creole Recipe

Pimento Cheese

A Southern classic though this isn't your Pimento cheese that is covered in nuts from the holidays. This is the original and better one.

Recipe

  • 8 oz.

    cheddar cheese
  • ½ cup

    Duke's mayonnaise
  • 1 Tbsp.

    Dijon mustard
  • 1 Tbsp.

    stone-ground mustard
  • 1 tsp.

    mustard powder
  • ¼. tsp.

    Kosher salt
  • ¼. tsp.

    freshly ground black pepper
  • 2 Tbsp.

    Italian flat leaf parsley , minced
  • ½ cup

    red bell pepper , roasted and finely diced
    Step 1
  • Combine the cheese, mayonnaise, Dijon mustard, stone-ground mustard, mustard powder, salt, pepper, parsley, and roasted bell peppers in a large bowl.

  • Step 2
  • Place in an air-tight container and allow the flavors to meld for at least 4 hours.
