A bruised peach, a little gin, and something sparkly. Summer in a glass. Not precious. Just good. And it sneaks up on you in the best way.

Gently muddle the peach slices in the bottom of a collins glass.
Add the gin and fresh lemon juice.
Fill with ice and top with soda water.
Stir gently and serve with a spoon to scoop out the peach at the end.
