Swine & Sea — Radishes with Ham Butter — French Creole Recipe

Radishes with Ham Butter

Traditionally, radishes are served with butter and flake salt, to help reduce the heat of a raw radish. As time has gone by, the butter has helped to provide more flavors. This Tasso Ham Butter adds the saltiness and smokiness of the Tasso Ham, while maintaining the creaminess and cooling effect you want from a traditional serving.

Recipe

Ham Butter
  • 8 oz.

    Tasso Ham , cut into 1/2" pieces
  • 1 Tbsp.

    maple syrup
  • 1 tsp.

    Tabasco
  • 2 tsp.

    Worcestershire sauce
  • 1 tsp.

    Dijon mustard
  • 4 Tbsp.

    unsalted butter , at room temperature
  • 1 Tbsp.

    Duke's mayonnaise
  • ½ tsp.

    Kosher salt
Assembly
  • 1 lb.

    radishes
Ham Butter
    Step 1
  • In a food processor or blender, add the Tasso Ham, maple syrup, Tabassco, Worcestershire sauce and mustard. Blend to make a paste.

  • Step 2
  • Add the butter and mayonnaise and Kosher salt and blend until smooth. Season with Kosher salt.

  • Step 3
  • Transfer the ham butter into an airtight container and cover with plastic wrap, pressing directly onto the surface to prevent a skin from forming. Chill for at 1 hour, with the longer the better.

Assembly
    Step 1
  • Serve the ham butter with the radishes.
