Sautéed Brussel Sprouts with Chaurice Sausage & Hot Honey

I’ve always struggled with how to prepare brussel sprouts during the holidays. They have always seemed so un-inspirational to me. But the bit of heat you get from the chaurice and the sweetness from the honey really gives this dish a nice sweet heat. However, the paprika from the chaurice sausage really pulls you South.

Recipe

  • 2 lbs.

    brussel sprouts
  • 1 Tbsp.

    olive oil
  • 1 lb.

    Chaurice sausage
  • 1 Tbsp.

    hot honey
    Step 1
  • Heat the oven to 350°.

  • Step 2
  • Bring a sauce pan of heavily salted water to a boil.

  • Step 3
  • In the meantime, prepare a large bowl with an ice water bath.

  • Step 4
  • Add the brussel sprouts to the boiling water for 3 minutes.

  • Step 5
  • Drain the brussel sprouts and place in the ice water bath.

  • Step 6
  • Add the olive oil to a cast iron skillet that is heated over medium-high heat.

  • Step 7
  • Place the brussel sprouts in the cast iron skillet, in a single layer cut side down.

  • Step 8
  • Sear the brussel sprouts until they begin char and remove form the skillet onto a plate with paper towels.

  • Step 9
  • Add the Chaurice sausage to the cast iron skillet and saute until the sausages being to char, as well. Remove the sausages from the skillet.

  • Step 10
  • Slice the Chaurice sausage on the diagonal.

  • Step 11
  • In a roaster pan or the cast iron skillet add the Chaurice sausage and the brussel sprouts and toss together. Add the hot honey to the mixture.

  • Step 12
  • Place the pan in the oven for 5 minutes. Remove from the oven and serve.
