Swine & Sea — Vieux Carré  — French Creole Recipe

Vieux Carré

The Vieux Carré is a counter-close drink: structured,
bitter-sweet, and exact. Rye, Cognac, sweet vermouth, and Bénédictine come
together under the discipline of proper stirring—cold enough, diluted enough,
balanced enough to sharpen the room rather than brighten it. This isn’t a
garnish moment. It’s a last-glass drink made correctly, served without
performance, and built to pair with browned edges, beans, and sharp greens.

Recipe

  • ¾ oz.

    rye whiskey
  • ¾ oz.

    cognac
  • ¾ oz.

    dry vermouth
  • ¼ oz.

    Bénédictine liqueur
  • 2 dashes

    Angostura bitters
  • 2 dashes

    Peychaud’s bitters
  • Lemon peel
    Step 1
  • Fill a mixing glass full of ice.

  • Step 2
  • Add all of the ingredients and bitter to the glass. Stir for 30 seconds until the ingredients are chilled and slightly diluted.

  • Step 3
  • Strain over a large ice cube in a rocks glass.

  • Step 4
  • Express the lemon peel over the glass and drop into the drink.
